Valentines Cookies

These lovely cookies are perfect for baking for your loved ones on Valentines day!

Don't forget to use as many organic, locally sourced ingredients as you possibly can.

Make your own heart shaped tags or use our lovely heart shaped seeded tags, then wrap them in some brown paper and tie with a red ribbon, for a personalised way to say “I love you!”

You will need:
2 large eggs
3/4 cup butter — softened
3/4 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon almond extract
1/4 teaspoon salt
2 cups flour
1 1/2 cups walnuts — finely chopped
1/2 cup raspberry or Strawberry jam

Method:

Preheat your oven to 350*.

Grease large cookie sheet using organic butter.

In a large bowl, beat your eggs lightly and then remove 3 tablespoons of your beaten egg to small bowl for later use.

Add your organic butter, sugar, vanilla, almond extract and salt to eggs. Beat this until it's evenly mixed, then add your flour and mix until it's nicely blended.

Separate your mixture so you have two thirds in one place to make your cookies with, and a third in another for your heart shaped tops. Take about a teaspoon and a half of the mixture and roll it into small balls, then dip in egg and push flat. Place on your cookie sheet about 2 inches apart.

Make an indent with your thumb in each cookie. Then Bake about 20 minutes or until golden brown.

Using the other portion of the mixture, lightly dust a rolling pin with flour, then roll it out flat, and using a heart shaped cutter, or a knife, cut out enough heart shapes, to cover all your cookies. Pop your heart shapes onto another baking sheet – these will only require 10 minutes of baking, so make sure you watch them!

Immediately put about 1/4 teaspoon of your strawberry or raspberry jam in the indent. Then pop the heart shaped tops onto your cookies, let them cool on a wire rack, and enjoy!
